- 1 large egg
- 2 tablespoons granulated sugar
- 2/3 cup chilled milk
- 1/2 cup chilled heavy cream
- 1/2 oz bourbon (optional) or additional 1/2 cup heavy cream
- 1 teaspoon vanilla extract
- A pinch of salt
- Fresh or ground nutmeg for serving
Instructions
- Separate the egg and add the yolk to a medium-sized bowl. Whisk in the sugar until the mixture becomes light and fluffy.
- In a pot over medium heat, warm the milk and heavy cream until it is about to boil. Remove from heat.
- Slowly add a tablespoon of the warm milk to the egg mixture, whisking quickly. Repeat this process twice more to temper the eggs.
