Ingredients
- 1 large pasteurized egg, separated
- 3 tablespoons sugar
- 2 teaspoons brandy or rum
- 1/2 teaspoon vanilla extract
- 1/5 teaspoon pumpkin pie spice
- A dash of bitters (preferably Angostura)
- 3/4 cup boiling water or hot 2% milk
- 1 ounce brandy
- 1 ounce rum
- Freshly grated nutmeg, optional
Instructions
- Beat the egg yolk until thin and loose in a large bowl, about 1 minute.
- Gradually beat in sugar, brandy, vanilla, pumpkin pie spice, and bitters until thick and frothy, 3-5 minutes.
- In another large bowl, beat egg whites on high speed until stiff but not dry.
- Fold a fourth of the egg whites into the yolk mixture until no white streaks remain.
- Fold in the remaining egg whites until combined.
- Refrigerate the mixture, covered, until serving.
- Place 3/4 cup of the mixture in a large mug for each serving.
- Add boiling water, brandy, and rum to the mug and stir until blended.
- Top with freshly grated nutmeg, if desired.
