Ingredients

  • 1 large pasteurized egg, separated
  • 3 tablespoons sugar
  • 2 teaspoons brandy or rum
  • 1/2 teaspoon vanilla extract
  • 1/5 teaspoon pumpkin pie spice
  • A dash of bitters (preferably Angostura)
  • 3/4 cup boiling water or hot 2% milk
  • 1 ounce brandy
  • 1 ounce rum
  • Freshly grated nutmeg, optional

Instructions

  1. Beat the egg yolk until thin and loose in a large bowl, about 1 minute.
  2. Gradually beat in sugar, brandy, vanilla, pumpkin pie spice, and bitters until thick and frothy, 3-5 minutes.
  3. In another large bowl, beat egg whites on high speed until stiff but not dry.
  4. Fold a fourth of the egg whites into the yolk mixture until no white streaks remain.
  5. Fold in the remaining egg whites until combined.
  6. Refrigerate the mixture, covered, until serving.
  7. Place 3/4 cup of the mixture in a large mug for each serving.
  8. Add boiling water, brandy, and rum to the mug and stir until blended.
  9. Top with freshly grated nutmeg, if desired.
