Ingredients
- 1 large egg (separated into yolk and white)
- 2 tablespoons granulated sugar
- 1/3 cup whole milk
- 2 tablespoons heavy whipping cream
- 1/8-1/4 teaspoon freshly grated nutmeg
- 1/4 teaspoon vanilla extract
- 2-3 tablespoons bourbon (optional)
Instructions
- Separate the egg white from the yolk. Place the yolk in a bowl and set the egg white aside.
- Add sugar to the egg yolk and whisk vigorously until the mixture is pale yellow and fluffy.
- In a saucepan, heat the milk, whipping cream, and nutmeg until it steams, but do not let it boil.
- Spoon a ladle full of the hot milk mixture and whisk it into the egg mixture to temper the eggs. Continue adding ladles of the hot milk to the egg mixture until most has been added.
- Slowly drizzle the egg mixture back into the saucepan, whisking as you do so.
- Heat over medium, stirring constantly, until the mixture begins to thicken. Do not let it boil.
- Remove from heat and stir in vanilla extract and bourbon (if using).
- Cover with plastic wrap and place in the refrigerator to cool for at least 1 hour.
- Serve with freshly grated nutmeg.
