Ingredients
- 1 1/2 cups unsweetened Almond milk
- 75g raw Cashew nuts
- 1/3 cup Water
- 3 tbsp Agave
- 1/2 tsp Almond extract
- 1 pinch Ground nutmeg
- 2 pinches Ground cinnamon
- 1-2 cinnamon sticks for decoration
- 2-3 Anise stars
- 4-5 Cardamom pods
- 2 tbsp Rum (optional)
Instructions
- Place the raw cashews in a bowl and pour 1/3 cup of boiling water over them. Let the cashews sit in the water for 30 minutes until soft. Then grind in a blender to form a smooth puree.
- In a saucepan, combine almond milk, cinnamon stick, anise stars, and cardamom pods. Bring to a boil, then simmer on low heat for 5 minutes. Allow the mixture to cool.
- Remove the cinnamon, anise, and cardamom from the milk, and transfer the milk into a blender. Add the blended cashews, almond extract, agave, nutmeg, cinnamon, and rum. Blend for 3-4 minutes at medium speed.
- Once blended, pour the vegan eggnog into a cup and decorate with ground cinnamon. Serve with cinnamon sticks for a festive touch.
