Ingredients
- 1 large egg
- 3/4 cup whole milk
- 1/4 cup heavy cream
- 1 cinnamon stick
- 1/2 teaspoon good vanilla extract
- Pinch of grated nutmeg
- 2 tablespoons granulated sugar
- Bourbon to taste (optional)
Instructions
- To pasteurize the egg, place it in a pan with cool water and heat it to 138°F/60°C, maintaining this temperature for 3 minutes.
- Separate the egg yolk from the white and set aside.
- In a saucepan, combine the milk, cream, cinnamon stick, vanilla, and nutmeg. Bring to a simmer at 160°F/72°C.
- In a bowl, beat the egg yolk and sugar until smooth and ribbons form. Add to the pan and bring the mixture back to 160°F/72°C.
- Remove the cinnamon stick, stir in bourbon (if using), and refrigerate until cool.
- In a separate bowl, beat the egg white until stiff peaks form. Fold into the cooled milk/cream mixture.
- Serve topped with nutmeg and a splash of bourbon (optional).
