Ingredients
- 1/2 cup whole milk
- 3 tbsp heavy cream
- 1/2 cinnamon stick
- Pinch of ground cinnamon
- Pinch of ground cloves
- 1 star anise
- 1/2 tsp vanilla extract
- Pinch of freshly grated nutmeg
- 1 tbsp sugar
- 1 large egg yolk
- 2 tbsp brandy
- 1/2 tbsp dark rum
Instructions
- In a saucepan, combine the milk, cream, cinnamon stick, ground cinnamon, cloves, star anise, vanilla extract, and half of the nutmeg. Heat to a gentle simmer, then remove from the heat and let it steep for 30 minutes.
- Reheat the milk mixture over medium heat. In a separate bowl, whisk together the egg yolk and sugar until thick and pale.
- Gradually add a small amount of the warm milk to the egg mixture while whisking constantly. Repeat this process a few times to temper the eggs.
- Whisk the egg mixture into the remaining milk and cook over medium heat for 4-5 minutes, stirring constantly until the eggnog barely thickens. Remove from the heat and whisk in the brandy, rum, and remaining nutmeg.
- Strain the eggnog through a fine mesh strainer into a heatproof container and refrigerate until cold.
- In a separate bowl, whisk the heavy cream with powdered sugar and vanilla extract until thick. Top the chilled eggnog with whipped cream and a sprinkle of freshly grated nutmeg.
