Ingredients

  • 1 cup honeycrisp cider
  • peel of 1 lemon
  • 2 whole cloves
  • 1 cardamom pod
  • 1/2 star anise
  • 1/2 cinnamon stick
  • 1/4 inch piece of fresh ginger, peeled
  • 1/4 teaspoon light brown sugar (optional)
  • 1/3 cup bourbon
  • 1 honeycrisp apple, thinly sliced crosswise about 1/4-inch thick

Instructions

  1. In a medium pot, combine the cider, lemon peel, cloves, star anise, cinnamon stick, ginger, and sugar.
  2. Bring the mixture to a simmer and let it simmer for 10 minutes.
  3. Cover the pot, remove from heat, and let the mixture steep for 1 hour.
  4. Reheat the mixture until warmed.
  5. Strain the mixture and stir in the bourbon.
  6. Using a 1 1/2 - 2 inch circle cutter, cut star centers out from the thin slices of apple and remove any remaining seeds.
  7. Pour the warm bourbon cider into a mug and top with the "starry" apple cut-outs. Serve hot.
