Ingredients

  • 1/2 cup whole milk
  • Seeds from 1/4 of a vanilla pod
  • 1 tablespoon cacao nibs
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon sea salt
  • 1/2 teaspoon freshly coarse-ground coffee
  • 2 ounces Irish whiskey
  • 3 tablespoons heavy cream

Instructions

  1. Sterilize a reusable glass bottle and cap by boiling it in hot water.
  2. In a small saucepan, bring the milk, vanilla seeds, and cacao nibs to a simmer for 30 minutes.
  3. Strain the mixture through a cheesecloth-lined strainer. Return the liquid to the pan and add sugar and salt. Gently simmer until reduced by half, approximately 1 hour.
  4. Add the coffee to the milk mixture, stir well, and let rest for 5 minutes. Strain the liquid and let it cool completely.
  5. Stir the whiskey into the milk mixture. Blend the mixture with the heavy cream for 20 seconds.
  6. Pour the finished Irish cream into the sterilized bottle, seal it, and chill in the fridge until cold.
