Ingredients

  • 1 leaf dinosaur kale (aka lacinato kale, ribs removed)
  • 2 tablespoons lime juice (about 1 lime's worth)
  • 1 1/2 tablespoons mandarin orange juice (about 1/2 an orange's worth)
  • 1/2 teaspoon fresh ginger, minced
  • 1/8 jalapeno pepper, seeds removed
  • 1/2 tablespoon maple syrup (or agave nectar)
  • 2 tablespoons water
  • 2 oz mezcal
  • 1 cup large ice cubes
  • 1 jalapeno slice (optional garnish)
  • 1 baby kale leaf (optional garnish)

Instructions

  1. In a blender, combine dinosaur kale, lime juice, mandarin orange juice, minced ginger, jalapeno, maple syrup, and water.
  2. Blend on low for 20 seconds, then on high for 40 seconds, scraping down the sides as needed, until the mixture is smooth.
  3. Transfer the blended mixture to a cocktail shaker. Add mezcal and ice.
  4. Close the shaker and shake vigorously for 15 seconds.
  5. Pour the mixture into a serving glass, including the ice.
  6. Garnish with a slice of jalapeno and a baby kale leaf if desired.
  7. Serve immediately.
