Ingredients
- 1 leaf dinosaur kale (aka lacinato kale, ribs removed)
- 2 tablespoons lime juice (about 1 lime's worth)
- 1 1/2 tablespoons mandarin orange juice (about 1/2 an orange's worth)
- 1/2 teaspoon fresh ginger, minced
- 1/8 jalapeno pepper, seeds removed
- 1/2 tablespoon maple syrup (or agave nectar)
- 2 tablespoons water
- 2 oz mezcal
- 1 cup large ice cubes
- 1 jalapeno slice (optional garnish)
- 1 baby kale leaf (optional garnish)
Instructions
- In a blender, combine dinosaur kale, lime juice, mandarin orange juice, minced ginger, jalapeno, maple syrup, and water.
- Blend on low for 20 seconds, then on high for 40 seconds, scraping down the sides as needed, until the mixture is smooth.
- Transfer the blended mixture to a cocktail shaker. Add mezcal and ice.
- Close the shaker and shake vigorously for 15 seconds.
- Pour the mixture into a serving glass, including the ice.
- Garnish with a slice of jalapeno and a baby kale leaf if desired.
- Serve immediately.
