Ingredients
- 2 large Egg yolks
- 2 1/2 tbsp Erythritol (or preferred sugar substitute)
- 3/4 cup Heavy cream
- 3/4 cup Almond milk (can also use coconut milk or an almond coconut blend if desired)
- 1/8 teaspoon Ground nutmeg
- A pinch of Salt
- 1/2 teaspoon Vanilla extract
- 1 oz Dark Rum or Bourbon (optional)
- 1/2-1 teaspoon Rum extract (optional, adjust to taste)
- 1/8 teaspoon Ground cinnamon (for garnish)
Instructions
- Whisk together the egg yolks and sugar substitute in a small bowl until they become lighter in color and well combined.
- In a medium saucepan, heat the heavy cream, almond milk, nutmeg, and salt over medium heat until it barely begins to simmer.
- Slowly drizzle the hot milk into the egg mixture, 1 tablespoon at a time, while whisking continuously to temper the eggs.
- Once the eggs are tempered, slowly pour them into the heated milk, stirring continuously.
- Return the pot to medium-low heat and stir for 8-10 minutes, or until the mixture thickens to around 160 degrees F.
- Remove the eggnog from the heat and stir in the vanilla, and if desired, add the dark rum, bourbon, or rum extract.
- Pour the eggnog into a pitcher and cover with plastic wrap or transfer to a sealable container. Refrigerate until completely cooled, approximately 1-2 hours.
- If the eggnog thickens too much, stir in 2-3 tablespoons of heavy cream or almond milk to reach the desired consistency before serving.
