Ingredients

  • 3-4 mint leaves
  • 3 tbsp water
  • 1 tbsp swerve
  • 1 lime
  • 1 tbsp unsweetened coconut flakes
  • 1 oz vodka
  • 4 oz coconut sparkling water

Instructions

  1. In a saucepan, boil water, swerve, and coconut flakes, then remove from heat.
  2. Cut the lime in half, juice 1/2 lime into the glass, and save the remaining half for garnish.
  3. Add mint leaves to the glass and pour in the homemade simple syrup.
  4. Muddle the ingredients.
  5. Add ice, vodka, and sparkling water, then stir.
  6. Garnish with a fresh lime slice.
