Ingredients

  • 2 oz Empress 1908 Gin (or gin of choice)
  • 6 homemade herbed ice cubes (optional)
  • 4 slices lime
  • 1 oz homemade basil, sage, and mint sugar-free simple syrup
  • 4 oz Diet tonic water
  • Fresh basil and sage for garnish
  • 1 cup water
  • 1.25 cups allulose
  • Handful of fresh herbs (e.g., sage, basil, and mint)

Instructions

  1. If using, prepare the herbed ice cubes by freezing a mixture of chopped herbs in an ice cube mold for 4-6 hours.
  2. To make the simple syrup, combine the fresh herbs, water, and allulose in a saucepan. Bring to a boil, then simmer for 15 minutes. Strain away the herbs and discard. Let the simple syrup cool in the fridge until ready to use.
  3. In a glass, add ice cubes and lime slices, then pour in the optional herbed simple syrup.
  4. Add the gin and tonic water, and stir well.
  5. Garnish with fresh herbs.
