Ingredients
- 2 oz Empress 1908 Gin (or gin of choice)
- 6 homemade herbed ice cubes (optional)
- 4 slices lime
- 1 oz homemade basil, sage, and mint sugar-free simple syrup
- 4 oz Diet tonic water
- Fresh basil and sage for garnish
- 1 cup water
- 1.25 cups allulose
- Handful of fresh herbs (e.g., sage, basil, and mint)
Instructions
- If using, prepare the herbed ice cubes by freezing a mixture of chopped herbs in an ice cube mold for 4-6 hours.
- To make the simple syrup, combine the fresh herbs, water, and allulose in a saucepan. Bring to a boil, then simmer for 15 minutes. Strain away the herbs and discard. Let the simple syrup cool in the fridge until ready to use.
- In a glass, add ice cubes and lime slices, then pour in the optional herbed simple syrup.
- Add the gin and tonic water, and stir well.
- Garnish with fresh herbs.
