Ingredients
- 1 large egg yolk
- 2 tbsp Swerve confectioners' style sweetener
- 1/4 cup heavy whipping cream
- 1/2 cup unsweetened almond milk
- 1/4 tsp ground nutmeg
- Pinch of ground cinnamon
- 1/4 tsp vanilla extract
- 1 oz rum or bourbon (optional)
Instructions
- In a medium bowl, whisk together the egg yolk and Swerve until the mixture becomes light and airy.
- In a saucepan over medium-high heat, combine the cream, almond milk, nutmeg, and cinnamon. Stir occasionally until the mixture simmers, then reduce the heat to low.
- Gradually add about 1/4 cup of the hot milk mixture to the egg mixture, whisking as you pour. Repeat this process two more times.
- Pour the egg mixture back into the saucepan on the stove, whisking constantly for a few minutes until the mixture slightly thickens.
- Remove from heat, stir in the vanilla and rum or bourbon (if using), and continue to whisk until well combined.
- Serve the eggnog warm or chilled, and garnish with a sprinkle of nutmeg and/or a cinnamon stick.
- Store any remaining eggnog in an airtight container in the refrigerator for up to one week.
