Ingredients

  • 1 large egg yolk
  • 2 tbsp Swerve confectioners' style sweetener
  • 1/4 cup heavy whipping cream
  • 1/2 cup unsweetened almond milk
  • 1/4 tsp ground nutmeg
  • Pinch of ground cinnamon
  • 1/4 tsp vanilla extract
  • 1 oz rum or bourbon (optional)

Instructions

  1. In a medium bowl, whisk together the egg yolk and Swerve until the mixture becomes light and airy.
  2. In a saucepan over medium-high heat, combine the cream, almond milk, nutmeg, and cinnamon. Stir occasionally until the mixture simmers, then reduce the heat to low.
  3. Gradually add about 1/4 cup of the hot milk mixture to the egg mixture, whisking as you pour. Repeat this process two more times.
  4. Pour the egg mixture back into the saucepan on the stove, whisking constantly for a few minutes until the mixture slightly thickens.
  5. Remove from heat, stir in the vanilla and rum or bourbon (if using), and continue to whisk until well combined.
  6. Serve the eggnog warm or chilled, and garnish with a sprinkle of nutmeg and/or a cinnamon stick.
  7. Store any remaining eggnog in an airtight container in the refrigerator for up to one week.
