Ingredients
- 2 oz. London Dry Gin
- 1/2 oz. Edith Grey simple syrup (recipe below)
- 3/4 oz. lemon juice
- 1 lavender-infused egg white
- Splash of sparkling wine
- Agave syrup (for garnish)
- Edith Grey tea (for garnish)
- 1 part Edith Grey hot tea
- 1 part white sugar
- 1 egg
- Dried lavender buds
Instructions
- To prepare the lavender-infused egg white, refrigerate a whole egg in its shell on a bed of lavender buds in a sealed container for 2-3 days.
- For the Edith Grey simple syrup, brew the Edith Grey tea according to the package instructions, then combine the strained tea with an equal part of hot sugar and stir until clear. Let it cool.
- In a shaker, combine the gin, Edith Grey syrup, lemon juice, and the lavender-infused egg white.
- Dry shake the mixture, then add ice and shake for at least 30 seconds.
- Strain the cocktail into a glass and top it off with a splash of sparkling wine.
- Garnish the glass with a stripe of agave syrup and a hint of Edith Grey tea on the condensation along the outside of the glass.
