Ingredients
- 1 lemon
- 1 oz Everclear (or quality vodka)
- 1/2 cup whole milk
- 1/3 cup sugar
- 1/2 vanilla bean
- cheesecloth
- bottle
Instructions
- Zest the lemon using a zester or grater and place the zest in a container with Everclear, allowing it to infuse for a week in a cool, dark place.
- In a pot, warm the milk, sugar, and vanilla bean seeds and pod over medium heat, stirring until dissolved. Let the mixture cool to room temperature.
- Remove the vanilla bean and strain the milk mixture through cheesecloth.
- Combine the lemon zest-infused Everclear with the sweet milk mixture and stir well. Strain the mixture through a colander lined with cheesecloth to remove any solids.
- Funnel the liquid into a bottle and store it in the freezer, leaving room for expansion if it freezes. Enjoy within six months, serving in chilled glasses.
