Ingredients

  • 1 lemon
  • 1 oz Everclear (or quality vodka)
  • 1/2 cup whole milk
  • 1/3 cup sugar
  • 1/2 vanilla bean
  • cheesecloth
  • bottle

Instructions

  1. Zest the lemon using a zester or grater and place the zest in a container with Everclear, allowing it to infuse for a week in a cool, dark place.
  2. In a pot, warm the milk, sugar, and vanilla bean seeds and pod over medium heat, stirring until dissolved. Let the mixture cool to room temperature.
  3. Remove the vanilla bean and strain the milk mixture through cheesecloth.
  4. Combine the lemon zest-infused Everclear with the sweet milk mixture and stir well. Strain the mixture through a colander lined with cheesecloth to remove any solids.
  5. Funnel the liquid into a bottle and store it in the freezer, leaving room for expansion if it freezes. Enjoy within six months, serving in chilled glasses.
