Lemon Sparkle Collins

Ingredients
- 1 oz Bombay Sapphire Gin
- Juice of 1/2 lemon
- 4 oz soda water
- 2 tsp caster sugar
- Ice cubes
- Lemon wedge
Instructions
- In a highball glass, mix the freshly squeezed lemon juice, caster sugar, and Bombay Sapphire.
- Add plenty of ice cubes and stir well.
- Top with soda water and stir again.
- Garnish with a lemon wedge and serve.
