Ingredients

  • 1/2 cup whole milk
  • Seeds from 1/4 vanilla pod
  • 1 tablespoon cacao nibs
  • 2 tablespoons granulated sugar
  • 1/8 teaspoon sea salt
  • 1 1/2 teaspoons freshly coarse-ground coffee
  • 1 3/4 ounces Irish whiskey
  • 1 1/2 tablespoons heavy cream

Instructions

  1. Sterilize a reusable glass bottle and cap by boiling it in hot water.
  2. In a small saucepan, gently simmer the milk, vanilla seeds, and cacao nibs for 30 minutes.
  3. Strain the mixture through a cheesecloth-lined strainer, then return the liquid to the pan. Add sugar and salt, and gently simmer until reduced by about half.
  4. Add the coffee to the milk mixture, stir well, and let rest for 5 minutes. Strain the liquid and let it cool completely.
  5. Stir the whiskey into the milk mixture, then blend it with the cream until smooth.
  6. Pour the finished Irish cream into the sterilized bottle and refrigerate until chilled through.
