Ingredients

  • 1 tablespoon unsalted butter
  • 2 tablespoons dark brown sugar
  • 1 tablespoon heavy cream
  • 1/4 teaspoon vanilla extract
  • Pinch of salt
  • 1/3 cup maple whiskey or bourbon
  • 1/2 cup plain seltzer

Instructions

  1. Melt butter in a small heavy-bottomed saucepan.
  2. Add brown sugar and simmer, whisking constantly until smooth and slightly lighter in color.
  3. Whisk in cream and cook until the sauce thickens.
  4. Remove from heat, and whisk in vanilla and salt.
  5. In a separate saucepan, warm whiskey (or bourbon) and seltzer until simmering.
  6. Whisk the warm whiskey and seltzer into the butterscotch mixture and watch the drink magically bubble and foam.
  7. Serve immediately in a heatproof glass.
