Melon Breeze Prosecco Fizz
A refreshing and bubbly cocktail that marries the flavors of cantaloupe and lemon verbena with Prosecco for a delightful and light libation.
Ingredients
- 1 1/2 tbsp sugar
- 1/2 tbsp lemon verbena leaves
- 1/4 small ripe cantaloupe
- Prosecco or other sparkling wine (for serving)
Instructions
- In a small saucepan over medium-low heat, stir together the sugar, lemon verbena, and 1 1/2 cups of water. Simmer the mixture until the sugar is dissolved and then reduce the heat to low, allowing it to gently simmer for 10 minutes.
- Let the syrup cool, then strain it into a pitcher, discarding the solids.
- Halve the cantaloupe, remove the seeds, and scoop the flesh into a blender. Purée the cantaloupe until smooth.
- Stir the cantaloupe purée into the syrup and chill the mixture until cold, allowing any foam to settle for 1-2 hours.
- To serve, fill a glass a third of the way with the melon mixture, then gently top it off with Prosecco.
