Ingredients
- 3/4 cup Unsweetened Almond Milk
- 1/4 cup Raw Cashew Nuts
- 2 tbsp Water
- 1 tbsp Agave
- 1/4 tsp Almond Extract
- Pinch of Ground Nutmeg
- 1/2 tsp Ground Cinnamon (plus extra for decoration)
- 1-2 Cinnamon Sticks for decoration
- 2-3 Anise Stars
- 4-5 Cardamom Pods
- 1 tbsp Rum (optional)
Instructions
- In a bowl, soak the raw cashews in 1/4 cup of boiling water for 30 minutes or until soft, then blend into a smooth puree.
- In a saucepan, heat the almond milk with cinnamon sticks, anise stars, and cardamom pods. Allow it to simmer for 5 minutes, then let it cool.
- Remove the spices from the milk and transfer the milk to a blender. Add the cashew puree, almond extract, agave, nutmeg, cinnamon, and rum. Blend for 3-4 minutes until smooth.
- Pour the eggnog into a glass, sprinkle with ground cinnamon, and garnish with cinnamon sticks. Serve and enjoy!
