Ingredients

  • 3/4 cup Unsweetened Almond Milk
  • 1/4 cup Raw Cashew Nuts
  • 2 tbsp Water
  • 1 tbsp Agave
  • 1/4 tsp Almond Extract
  • Pinch of Ground Nutmeg
  • 1/2 tsp Ground Cinnamon (plus extra for decoration)
  • 1-2 Cinnamon Sticks for decoration
  • 2-3 Anise Stars
  • 4-5 Cardamom Pods
  • 1 tbsp Rum (optional)

Instructions

  1. In a bowl, soak the raw cashews in 1/4 cup of boiling water for 30 minutes or until soft, then blend into a smooth puree.
  2. In a saucepan, heat the almond milk with cinnamon sticks, anise stars, and cardamom pods. Allow it to simmer for 5 minutes, then let it cool.
  3. Remove the spices from the milk and transfer the milk to a blender. Add the cashew puree, almond extract, agave, nutmeg, cinnamon, and rum. Blend for 3-4 minutes until smooth.
  4. Pour the eggnog into a glass, sprinkle with ground cinnamon, and garnish with cinnamon sticks. Serve and enjoy!
