Ingredients

  • 8 Earl Grey tea bags
  • 1/4 cup plus 2 1/2 tablespoons granulated sugar
  • 1 cup ruby port
  • 4 fluid ounces aged dark rum
  • 2 fluid ounces Allspice Dram
  • 2 fluid ounces freshly squeezed lemon juice
  • 1 cup whole milk

Instructions

  1. Heat 2 1/4 cups of water to 208degF or bring it to a boil and let it cool for 20 seconds.
  2. Steep the Earl Grey tea bags in the hot water for 3 minutes, then remove the bags without squeezing them.
  3. Stir in the sugar, port, rum, Allspice Dram, and lemon juice, and allow the mixture to cool to room temperature.
  4. Pour the milk into a glass pitcher and then add the tea mixture. Let it sit undisturbed for 1 hour.
  5. Line a large sieve with a coffee filter and strain the mixture into a wide container. Transfer to a pitcher and chill before serving.
  6. Store the elixir in a tightly sealed container in the refrigerator for up to 2 months.
