Ingredients

  • 8 Earl Grey tea bags
  • 1/4 cup plus 2 1/2 tablespoons granulated sugar
  • 1 cup ruby port
  • 4 fluid ounces aged dark rum
  • 2 fluid ounces Allspice Dram
  • 2 fluid ounces freshly squeezed lemon juice
  • 1 cup whole milk

Instructions

  1. Heat 2 1/4 cups of water to 208°F or bring to a boil and let it cool for 20 seconds.
  2. Steep the tea bags in the hot water for 3 minutes, then remove the bags without squeezing them.
  3. Add sugar to the tea, stir to dissolve, and then add port, rum, Allspice Dram, and lemon juice. Allow the mixture to cool to room temperature.
  4. Pour the whole milk into a glass pitcher, then add the tea mixture without stirring. Let it sit at room temperature for 1 hour.
  5. Line a large, fine-mesh sieve with a commercial-sized coffee filter and strain the mixture into a wide 4-quart container. Once completely filtered, transfer to a quart jar or pitcher and chill before serving.
  6. Store the clarified milk punch tightly sealed in the refrigerator for up to 2 months.
