Ingredients

  • 8 Earl Grey tea bags
  • 1/4 cup plus 2 1/2 tablespoons granulated sugar
  • 1 cup ruby port
  • 4 fluid ounces aged dark rum
  • 2 fluid ounces Allspice Dram
  • 2 fluid ounces freshly squeezed lemon juice
  • 1 cup whole milk

Instructions

  1. Heat 2 1/4 cups of water to 208°F or bring it to a boil and let it cool for 20 seconds.
  2. Steep the tea bags in the hot water for 3 minutes, then remove the bags without squeezing them.
  3. Stir in the sugar, port, rum, Allspice Dram, and lemon juice, and allow the mixture to cool to room temperature.
  4. Pour the milk into a glass pitcher, then add the tea mixture and let it sit for 1 hour without stirring.
  5. Line a large sieve with a coffee filter and strain the mixture into a wide container.
  6. Once filtered, transfer the mixture to a jar or pitcher and chill before serving.
  7. Store tightly sealed in the refrigerator for up to 2 months.
