Ingredients
- 8 Earl Grey tea bags
- 1/4 cup plus 2 1/2 tablespoons granulated sugar
- 1 cup ruby port
- 4 fluid ounces aged dark rum
- 2 fluid ounces Allspice Dram
- 2 fluid ounces freshly squeezed lemon juice
- 1 cup whole milk
Instructions
- Heat 2 1/4 cups of water to 208°F or bring it to a boil and let it cool for 20 seconds.
- Steep the tea bags in the hot water for 3 minutes, then remove the bags without squeezing them.
- Stir in the sugar, port, rum, Allspice Dram, and lemon juice, and allow the mixture to cool to room temperature.
- Pour the milk into a glass pitcher, then add the tea mixture and let it sit for 1 hour without stirring.
- Line a large sieve with a coffee filter and strain the mixture into a wide container.
- Once filtered, transfer the mixture to a jar or pitcher and chill before serving.
- Store tightly sealed in the refrigerator for up to 2 months.
