Ingredients

  • 1/2 cup fresh or frozen blueberries
  • 1/4 cup water
  • 1/4 cup sugar
  • 1 tablespoon lemon juice
  • 3/4 cup white grape juice or apple juice
  • 2 ounces amber rum
  • Ice

Instructions

  1. In a saucepan, simmer the blueberries with water for 5 minutes to release their juice.
  2. In a separate pot, simmer sugar and water to create a simple syrup.
  3. Strain the juice from the blueberries and add it to a covered plastic container.
  4. Blend the strained blueberries and add the puree to the container along with the simple syrup and remaining ingredients.
  5. Stir well, cover, and freeze for about 6 hours.
  6. Break down the ice sheets into smaller crystals using an immersion blender or vigorous stirring.
  7. Return the container to the freezer and stir every few hours until ready to serve.
  8. When serving, spoon 4 ounces of the slush into an 8-ounce glass, add 2 or more ounces of club soda, stir, and serve. Alternatively, serve in martini glasses with a splash of Prosecco and garnish with a lemon slice and frozen berries.
