Ingredients
- 1/2 cup fresh or frozen blueberries
- 1/4 cup water
- 1/4 cup sugar
- 1 tablespoon lemon juice
- 3/4 cup white grape juice or apple juice
- 2 ounces amber rum
- Ice
Instructions
- In a saucepan, simmer the blueberries with water for 5 minutes to release their juice.
- In a separate pot, simmer sugar and water to create a simple syrup.
- Strain the juice from the blueberries and add it to a covered plastic container.
- Blend the strained blueberries and add the puree to the container along with the simple syrup and remaining ingredients.
- Stir well, cover, and freeze for about 6 hours.
- Break down the ice sheets into smaller crystals using an immersion blender or vigorous stirring.
- Return the container to the freezer and stir every few hours until ready to serve.
- When serving, spoon 4 ounces of the slush into an 8-ounce glass, add 2 or more ounces of club soda, stir, and serve. Alternatively, serve in martini glasses with a splash of Prosecco and garnish with a lemon slice and frozen berries.
