Ingredients

  • 1 ripe peach (pitted and quartered)
  • 2-3 fresh basil leaves
  • 3/4 tablespoon honey
  • juice of 1/4 lemon (about 3/4 tablespoon)
  • 2 ounces lemon rum
  • 1/2 ounce lemon lime soda
  • Ice cubes

Instructions

  1. Preheat a gas grill to high heat (450°F - 500°F).
  2. Cook the peach quarters covered over direct heat for 2-3 minutes per side until they have softened.
  3. Remove the peaches from the grill and cut them into 1-inch pieces. Allow them to cool.
  4. In a pitcher, muddle the grilled peaches, basil, honey, and lemon juice together to release the juice of the peaches and combine the flavors.
  5. Add the lemon rum and lemon lime soda, then stir to combine.
  6. To serve, pour the cocktail into a lowball glass filled partway with ice. You can strain the cocktail into the glass using a strainer, or allow some of the muddled peaches to fall into the glass.
