Ingredients

  • 2 teaspoons sugar
  • 1 tablespoon fresh lime juice
  • 12 large mint leaves
  • 1 medium ripe peach, peeled and sliced
  • 2 ounces club soda
  • 2 ounces white rum

Instructions

  1. Peel the peach and slice into 1/2 inch thick slices.
  2. Place half of the peach slices in a glass, and reserve the remaining slices for garnish.
  3. Add the mint leaves, sugar, and lime juice to the glass.
  4. Muddle the ingredients well until the peach softens.
  5. If the peach is under ripe, let it sit with the sugar for a few minutes until it softens.
  6. Add ice to the glass, then pour in the rum and club soda.
  7. Stir the drink well.
  8. Garnish by adding the remaining peach slices to the side and on top of the drink.
  9. Optionally, add a sprig of mint and a lime wedge.
