Ingredients

  • 1 ripe peach (peeled and pitted)
  • 1 tablespoon water
  • Sugar or sweetener (if needed, to taste)
  • 2 oz prosecco or sparkling wine (chilled)
  • Raspberry liqueur (optional)

Instructions

  1. In a blender, blend the ripe peach, water, and sugar (if using) until smooth.
  2. Strain the peach puree to remove any lumps, then chill for a couple of hours.
  3. Once chilled, strain the peach puree again for an extra smooth texture, if desired.
  4. Pour the peach puree into a champagne flute or tall glass.
  5. Add a dash of raspberry liqueur to the glass.
  6. Gently top off the glass with prosecco or sparkling wine.
