Ingredients

  • 1 ripe pear (peeled and frozen)
  • 1/2 cup fresh raspberries (for puree and garnish)
  • Pomegranate Italian soda (or sweetened pomegranate juice)
  • 4 oz sparkling wine or ginger ale (chilled)
  • 1/2 teaspoon lemon juice

Instructions

  1. Peel the ripe pear, cut into quarters, and remove stems and seeds.
  2. Toss the cut pears in lemon juice and water to prevent browning, then place in a sealed bag or airtight container and freeze for an hour or two.
  3. Prepare the raspberry coulis or puree by blending fresh raspberries with a dash of lemon juice and a teaspoon of sugar, then press the mixture through a sieve to remove seeds.
  4. Once the pears are frozen, puree them in a blender with a teaspoon of sugar to create a slushie texture.
  5. In a large cocktail glass, add a couple of teaspoons of raspberry coulis, a scoop of the frozen pear slushie, a few ounces of pomegranate Italian soda, and top with sparkling wine. For a non-alcoholic version, use ginger ale instead of wine.
  6. Garnish with fresh raspberries and a sprig of mint, if desired.
