Pimm's Citrus Cooler

A refreshing and less sweet summer cooler made with Pimm's No 1, citrus tea, and a hint of mint.

Ingredients

  • 4 tea bags
  • 0.70 oz mint
  • 3.50 tbsp caster sugar
  • Juice of 1 large orange, plus slices to serve
  • Juice of 1 lemon, plus slices to serve
  • 2.70 fl oz Pimm's No 1
  • A few sliced strawberries and plenty of ice, to serve

Instructions

  1. Place the tea bags and half of the mint in a large jug.
  2. Pour 5 cups of boiling water over the tea bags and mint.
  3. Let it infuse for 10 minutes, then remove the tea bags and stir in the sugar.
  4. Once cooled, remove the mint and add the orange juice, lemon juice, and Pimm's No 1.
  5. Chill the mixture thoroughly; it can be made up to a day ahead.
  6. Serve over plenty of ice, with slices of orange, lemon, and strawberry, and remaining mint sprigs.
