Pimm's Citrus Cooler
A refreshing and less sweet summer cooler made with Pimm's No 1, citrus tea, and a hint of mint.

Ingredients
- 4 tea bags
- 0.70 oz mint
- 3.50 tbsp caster sugar
- Juice of 1 large orange, plus slices to serve
- Juice of 1 lemon, plus slices to serve
- 2.70 fl oz Pimm's No 1
- A few sliced strawberries and plenty of ice, to serve
Instructions
- Place the tea bags and half of the mint in a large jug.
- Pour 5 cups of boiling water over the tea bags and mint.
- Let it infuse for 10 minutes, then remove the tea bags and stir in the sugar.
- Once cooled, remove the mint and add the orange juice, lemon juice, and Pimm's No 1.
- Chill the mixture thoroughly; it can be made up to a day ahead.
- Serve over plenty of ice, with slices of orange, lemon, and strawberry, and remaining mint sprigs.
