Ingredients

  • 3 oz rosé wine
  • 1 1/2 tbsp sugar
  • 1 1/2 tbsp water
  • 2 1/2 oz frozen pineapple chunks
  • 6 fresh mint leaves
  • 1/2 oz fresh lemon juice
  • 1/4 cup ice cubes

Instructions

  1. Pour the rosé into an ice cube tray and freeze overnight or for at least 6 hours.
  2. In a small saucepan, combine the sugar and water, then add the pineapple chunks. Bring to a boil, then remove from heat and let it sit for 10 minutes. Stir in 5 mint leaves and let it sit for an additional 20 minutes. Strain the syrup through a fine-mesh sieve into a bowl, then chill in the fridge for about 30 minutes.
  3. In a blender, combine the frozen rosé, pineapple mint syrup, lemon juice, 5 mint leaves, and ice cubes. Blend until smooth.
  4. Transfer the blended frosé into the freezer and freeze until thickened, about 25-35 minutes.
  5. Blend again until smooth, then pour into a serving glass and enjoy immediately.
