Pineapple Breeze Frosé
A tropical and refreshing frozen cocktail made with rosé wine, pineapple mint syrup, and a splash of lemon juice.
Ingredients
- 3 oz rosé wine
- 1 1/2 tbsp sugar
- 1 1/2 tbsp water
- 2 1/2 oz frozen pineapple chunks
- 6 fresh mint leaves
- 1/2 oz fresh lemon juice
- 1/4 cup ice cubes
Instructions
- Pour the rosé into an ice cube tray and freeze overnight or for at least 6 hours.
- In a small saucepan, combine the sugar and water, then add the pineapple chunks. Bring to a boil, then remove from heat and let it sit for 10 minutes. Stir in 5 mint leaves and let it sit for an additional 20 minutes. Strain the syrup through a fine-mesh sieve into a bowl, then chill in the fridge for about 30 minutes.
- In a blender, combine the frozen rosé, pineapple mint syrup, lemon juice, 5 mint leaves, and ice cubes. Blend until smooth.
- Transfer the blended frosé into the freezer and freeze until thickened, about 25-35 minutes.
- Blend again until smooth, then pour into a serving glass and enjoy immediately.
