Pineapple Herb Smash

Ingredients
- 2 to 3 sprigs fresh rosemary
- 1 cup sugar
- 1 cup water
- 1 oz Rosemary Simple Syrup
- 2 oz whiskey
- 3/4 oz lemon juice
- 3/4 oz pineapple juice
- 6 to 8 fresh mint leaves
- Rosemary sprig for garnish
Instructions
- In a small saucepan, combine rosemary, sugar, and water for the simple syrup and bring to a boil. Let it simmer until the sugar dissolves completely. Remove from heat and let it steep for 30 minutes. Discard the rosemary sprigs and store the simple syrup in a sealed container in the refrigerator.
- In a shaker, muddle the simple syrup and mint leaves together.
- Add ice to the shaker, then pour in the whiskey, lemon juice, and pineapple juice. Shake for 10 to 15 seconds.
- Strain the mixture into a rocks glass filled with crushed ice. Garnish with a sprig of rosemary and serve.
