Ingredients

  • 1 large egg white
  • 1 oz. simple syrup (1:1 ratio of sugar to water)
  • 1 oz. fresh lemon or lime juice
  • 2 oz. pisco
  • Angostura bitters

Instructions

  1. In a large cocktail shaker, combine 1 large egg white, 1 oz. simple syrup, 1 oz. fresh lemon or lime juice, and 2 oz. pisco.
  2. Seal the shaker and shake vigorously without ice for 30 seconds to emulsify the egg white.
  3. Unseal the shaker, add ice, and shake vigorously again until well chilled.
  4. Strain the mixture into a chilled coupe or old-fashioned glass without ice.
  5. Dot the frothy top with 3 drops or more of Angostura bitters.
