Ingredients
- 1 large egg white
- 1 oz. simple syrup (1:1 ratio of sugar to water)
- 1 oz. fresh lemon or lime juice
- 2 oz. pisco
- Angostura bitters
Instructions
- In a large cocktail shaker, combine 1 large egg white, 1 oz. simple syrup, 1 oz. fresh lemon or lime juice, and 2 oz. pisco.
- Seal the shaker and shake vigorously without ice for 30 seconds to emulsify the egg white.
- Unseal the shaker, add ice, and shake vigorously again until well chilled.
- Strain the mixture into a chilled coupe or old-fashioned glass without ice.
- Dot the frothy top with 3 drops or more of Angostura bitters.
