Ingredients

  • 1 1/2 tbsp caster sugar
  • 1/2 pomegranate, seeds removed
  • 1 1/2 oz vodka, plus extra, to rim
  • 3 1/2 oz pink grapefruit soda
  • Ice cubes
  • Fresh mint sprig for garnish

Instructions

  1. In a mortar, combine the caster sugar and 1 teaspoon of the pomegranate seeds. Use a pestle to pound until the sugar turns pink, then discard the seeds.
  2. Moisten the rim of a glass with a sponge dipped in vodka, then dip the rim into the pomegranate sugar mixture.
  3. In a mixing jug, combine the vodka, pink grapefruit soda, remaining pomegranate seeds, and ice cubes. Stir well.
  4. Pour the punch into the prepared glass and garnish with a fresh mint sprig.
