Ingredients

  • 1 egg white, beaten until frothy
  • 1.75 tbsp granulated white sugar
  • 1.50 cups pomegranate juice, chilled
  • 1 cup Pimms
  • Juice of 1/2 lemon
  • 10 oz ginger beer, chilled

Instructions

  1. Beat the egg white until frothy and set aside.
  2. Dip the rim of a glass in the egg white, then into the sugar, and set aside to dry.
  3. In a shaker, mix the pomegranate juice, Pimms, and lemon juice with plenty of ice.
  4. Strain the mixture into the prepared glass.
  5. Top up with ginger beer and serve.
