  • 1 1/4 cups unfiltered apple cider
  • 2 oz bourbon
  • 3/4 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1 tbsp maple syrup
  • 1/4 cup pumpkin puree
  • 1 1/2 cups vanilla ice cream (about 3 medium scoops)
  • Garnish: maple whipped cream

Instructions

  1. Start by making the cider reduction: bring the apple cider to a boil in a small saucepan, then let it simmer until reduced by half. Let it cool and refrigerate for at least 1 hour or up to 1 week. This will make enough for 2 batches of milkshakes.
  2. Next, prepare the maple whipped cream: whip the cold heavy cream until soft peaks form, then gradually add in the maple syrup while continuing to whip until soft peaks form.
  3. For the milkshake: in a blender, combine the cider reduction, bourbon, cinnamon, ginger, maple syrup, and pumpkin puree. Add the vanilla ice cream and blend until smooth. Pour into serving glasses, top with maple whipped cream, and serve immediately.
