Ingredients

  • 2 oz butternut pumpkin, cut into 3cm pieces
  • 1/2 oz maple syrup
  • 1/2 tbsp extra virgin olive oil
  • 1/2 tsp ground cinnamon, plus extra to serve
  • 1/4 tsp freshly grated nutmeg
  • 1 sage leaf, plus extra to serve
  • 1/2 oz caster sugar
  • 3 oz vodka
  • Juice of 1/4 lemon
  • 1 egg white

Instructions

  1. Preheat oven to 350degF.
  2. Combine pumpkin, maple syrup, oil, cinnamon, nutmeg, and sage on a baking sheet lined with parchment paper.
  3. Roast for 45 minutes or until caramelized and very tender. Remove and let it cool. Discard sage leaf.
  4. Transfer roasted pumpkin mixture to a food processor and puree.
  5. In a small saucepan, combine sugar and 1/4 cup of water over medium heat, stirring until sugar dissolves. Remove from heat and cool completely.
  6. Add pumpkin puree and vodka, then chill for at least 2 hours to infuse. Strain through a sieve lined with cheesecloth.
  7. Squeeze to drain excess liquid and discard solids.
  8. Place half the vodka mixture in a cocktail shaker half-filled with ice.
  9. Add half the lemon juice and the egg white, then close and shake well.
  10. Strain into a cocktail glass and repeat with the remaining vodka mixture, lemon juice, and egg white.
  11. Sprinkle with extra cinnamon and top with an extra sage leaf to serve.
