Ingredients
- 2 tablespoons caster sugar
- 2 oz raspberries
- 1 oz vodka
- Handful of mint leaves, half torn
- Small pinch of dried chilli flakes
- 1/4 cup Prosecco or sparkling wine
- Ice
Instructions
- In a small saucepan over medium heat, combine sugar and 2 tablespoons of water, bringing it to a simmer until the sugar dissolves. Remove from heat, cool, and then chill until needed.
- Use a food processor to blend half of the raspberries until smooth. Strain the mixture, discarding any solids.
- Half-fill a cocktail shaker with ice and add vodka, torn mint leaves, chilli flakes, raspberry puree, and 2 tablespoons of the sugar syrup. Shake well and then stir in the Prosecco.
- Fill a glass with ice, strain the cocktail over it, and serve with remaining mint and raspberries.
