Raspberry Rose Fizz Delight

Ingredients
- 3 oz sparkling water
- 1 egg white
- 1 1/2 oz gin
- 3/4 oz lemon juice (about 1/4 of a lemon)
- 3/4 oz raspberry syrup (recipe below)
- 3 drops rosewater
- 1 rose petal for garnish
- ice
- FOR THE RASPBERRY SYRUP:
- 1 cup raspberries
- 1/2 cup water
- 1/2 cup sugar
Instructions
- In a saucepan over medium heat, dissolve sugar in water, then add raspberries and bring to a boil.
- Remove from heat and let the mixture cool completely, then strain through a fine mesh sieve, pressing the raspberries to extract all the juice.
- Pour sparkling water into a highball glass with ice.
- Vigorously shake the egg white in a cocktail shaker for about 10 seconds until foamy.
- Add gin, lemon juice, raspberry syrup, and rosewater to the shaker and shake vigorously for about 30 seconds.
- Pour the mixture into the glass and garnish with a rose petal.
