Ingredients

  • 3 oz sparkling water
  • 1 egg white
  • 1 1/2 oz. gin
  • 3/4 oz lemon juice (approximately 1/4 of a lemon)
  • 3/4 oz raspberry syrup
  • 3 drops rosewater
  • 1 rose petal for garnish
  • Ice
  • ### For the Raspberry Syrup
  • 1 cup raspberries
  • 1/2 cup water
  • 1/2 cup sugar

Instructions

  1. In a saucepan over medium heat, dissolve the sugar in water, then add raspberries and bring to a boil. Remove from heat and let cool completely. Strain through a fine mesh sieve, pressing the raspberries to extract all the juice.
  2. Pour the sparkling water into a highball glass with ice.
  3. In a cocktail shaker, vigorously shake the egg white until foamy.
  4. Add gin, lemon juice, raspberry syrup, and rosewater to the shaker, then shake vigorously for 30 seconds.
  5. Pour the mixture into the glass and garnish with a rose petal.
