Ingredients
- 2/3 cup caster sugar
- 1 1/4 cups water
- 4 Earl Grey tea bags
- 2 oz gin
- 1 tbsp elderflower cordial
- 3/4 cup soda water
- Juice of 1/2 lemon
- 1-2 tsp Angostura bitters
- 1 lemon, cut into wedges
- 1 nectarine, cored and sliced
- Edible flowers (to serve)
Instructions
- In a saucepan, heat the sugar and 1 1/4 cups water, stirring until the sugar dissolves.
- Bring the mixture to a boil, then remove from heat and add the Earl Grey tea bags. Allow the tea to steep for 30 minutes, then squeeze the bags and discard them.
- Transfer the cooled syrup to a bowl and add the gin, elderflower cordial, soda water, lemon juice, and Angostura bitters to taste.
- Stir in the lemon wedges, sliced nectarine, and plenty of ice.
- Adjust the taste as needed and garnish with edible flowers before serving.
