Ingredients

  • 3 tablespoons sugar
  • 1 cup chopped rhubarb
  • 3 tablespoons vodka
  • 3 tablespoons rhubarb syrup
  • 1 piece rhubarb
  • 1 tablespoon advocaat
  • 3 tablespoons lemonade

Instructions

  1. In a saucepan, combine the sugar and water, then gently heat until the sugar dissolves.
  2. Add the chopped rhubarb, cover, and simmer for about 5 minutes until the rhubarb is tender.
  3. Strain the mixture through a fine sieve, then boil the liquid until it becomes syrupy. Cool completely to make the rhubarb syrup.
  4. Chill a cocktail glass with ice. Shake the vodka and 3 tablespoons of rhubarb syrup with ice until well mixed and chilled.
  5. Create small rhubarb shreds using a vegetable peeler and place them in iced water to curl.
  6. In a separate jug, whisk together the advocaat and lemonade with ice to lighten.
  7. Divide the vodka and rhubarb mixture between the glasses, straining through a small sieve to catch the ice.
  8. Carefully pour the advocaat mixture into each glass over an upside-down spoon so that it floats on the surface of the vodka syrup mixture.
  9. Drain the rhubarb shreds well and use them to garnish your cocktails.
