Ingredients
- 2 cups rhubarb, sliced
- 2 tablespoons coarsely chopped ginger
- 1/4 cup roughly chopped fresh mint (optional)
- 1 cup sugar
- 1 cup water
- A tiny dash of pink food coloring (if needed)
- 1 oz lime juice (about 2 tablespoons)
- 1/2 inch fresh ginger, sliced (about 2 teaspoons)
- 4 fresh mint leaves (optional)
- 3 oz vodka (6 tablespoons)
- 1 cup ginger beer
Instructions
- To make the ginger rhubarb simple syrup: Combine the rhubarb, ginger, mint, sugar, water, and food coloring in a small saucepan and bring to a boil for 10 minutes.
- Strain the mixture into a clean bottle or jar. For a more intense flavor, let the mixture cool completely before straining.
- In a glass or copper mug, squeeze lime juice and add the squeezed lime, fresh ginger, and mint leaves. Muddle to release the juices.
- Fill the glass with ice, then pour in the vodka, ginger beer, and ginger rhubarb simple syrup.
- Stir well and garnish with lime, mint, and a stalk of rhubarb.
