Ingredients

  • 2 cups rhubarb, sliced
  • 2 tablespoons coarsely chopped ginger
  • 1/4 cup roughly chopped fresh mint (optional)
  • 1 cup sugar
  • 1 cup water
  • A tiny dash of pink food coloring (if needed)
  • 1 oz lime juice (about 2 tablespoons)
  • 1/2 inch fresh ginger, sliced (about 2 teaspoons)
  • 4 fresh mint leaves (optional)
  • 3 oz vodka (6 tablespoons)
  • 1 cup ginger beer

Instructions

  1. To make the ginger rhubarb simple syrup: Combine the rhubarb, ginger, mint, sugar, water, and food coloring in a small saucepan and bring to a boil for 10 minutes.
  2. Strain the mixture into a clean bottle or jar. For a more intense flavor, let the mixture cool completely before straining.
  3. In a glass or copper mug, squeeze lime juice and add the squeezed lime, fresh ginger, and mint leaves. Muddle to release the juices.
  4. Fill the glass with ice, then pour in the vodka, ginger beer, and ginger rhubarb simple syrup.
  5. Stir well and garnish with lime, mint, and a stalk of rhubarb.
