  • 1 3/4 cups chopped rhubarb
  • 1 cup sugar
  • 1 sprig rosemary
  • Red food coloring (optional)
  • 2 1/2 oz rhubarb syrup
  • 2/3 oz elderflower cordial
  • 2 oz water
  • 1 1/3 oz gin
  • Ice


  1. In a pot, boil the chopped rhubarb in water, then simmer for an hour.
  2. Strain the liquid and add it with sugar to a pot, simmering until it thickens into a syrup. Allow it to cool.
  3. Fill a short glass with ice and pour in rhubarb syrup.
  4. In a separate glass, mix elderflower cordial, water, and gin.
  5. To achieve an ombre effect, gently pour the gin/cordial mix over the back of a spoon into the cocktail glass.
  6. Garnish with a sprig of rosemary and serve.
