Rhubarb Rose Gin Fizz

Ingredients
- 1 3/4 cups chopped rhubarb
- 1 cup sugar
- 1 sprig rosemary
- Red food coloring (optional)
- 2 1/2 oz rhubarb syrup
- 2/3 oz elderflower cordial
- 2 oz water
- 1 1/3 oz gin
- Ice
Instructions
- In a pot, boil the chopped rhubarb in water, then simmer for an hour.
- Strain the liquid and add it with sugar to a pot, simmering until it thickens into a syrup. Allow it to cool.
- Fill a short glass with ice and pour in rhubarb syrup.
- In a separate glass, mix elderflower cordial, water, and gin.
- To achieve an ombre effect, gently pour the gin/cordial mix over the back of a spoon into the cocktail glass.
- Garnish with a sprig of rosemary and serve.
