Ingredients
- 1 1/2 cups water
- 2 tablespoons sugar
- 1 tablespoon fresh rosemary leaves
- 3 stalks fresh rhubarb (diced)
- 6 teaspoons fresh lemon juice
- 3 oz white rum
- 1 sprig fresh rosemary for garnish
Instructions
- In a small saucepan, simmer 1 cup of water and 1/4 cup of sugar over medium heat until the sugar dissolves.
- Remove from heat and add 1/2 cup of rosemary leaves. Let it steep for 5 minutes, then strain the syrup and let it cool.
- In a blender, combine diced rhubarb, 1 tablespoon of lemon juice, 1 1/4 cups of water, and 1/4 cup of sugar. Blend into a coarse puree and strain through a fine-mesh strainer into a bowl.
- Cover and refrigerate the rhubarb juice and rosemary syrup separately for at least 4 hours or up to 2 days.
- When ready to make the cocktail, mix the rhubarb juice, rosemary syrup, remaining lemon juice, and rum in a pitcher. Stir to combine.
- Serve the cocktail in glasses filled with ice, or for a martini-style cocktail, pour into an ice-filled shaker and stir until very cold. Garnish with a fresh sprig of rosemary and/or a fresh rhubarb ribbon threaded onto a cocktail pick.
