Roasted Peach and Rosemary Fizz
A refreshing mocktail infused with the flavors of roasted peach, rosemary, and zesty lemon, topped with Perrier mineral water.
Ingredients
- 1/4 cup raw local honey
- 1 cup water
- 1 sprig rosemary
- 1 peach, sliced and roasted
- 1/2 oz fresh lemon juice
- 1/2 oz rosemary simple syrup
- 1 oz pure pineapple juice
- 3-4 oz Perrier mineral water
- Ice
Instructions
- In a small saucepan, combine water, rosemary, and raw local honey. Heat over high heat until boiling, stirring to dissolve honey. Reduce to a simmer and cook for 8 minutes. Let the syrup cool and strain through a fine mesh strainer to remove bits.
- Roast the sliced peach in a pan for 5-8 minutes, then transfer into a glass dish after pressing with a spatula to release the juice.
- Muddle the roasted peach and rosemary syrup in the bottom of a cocktail shaker.
- Fill the shaker with ice, add the lemon juice and pineapple juice, and shake for 10 seconds.
- Strain the mixture through a mini strainer into a cocktail glass and fill to the top with Perrier water.
- Garnish with a rosemary sprig.
