Ingredients

  • 2 Castelvetrano or other mild green olives
  • 6 oz beer (such as Anchor Steam), chilled
  • Roman mix*, to top
  • 2 oysters (preferably Kumamato or Kusshi), shucked, liquor reserved
  • Garnish: chile threads
  • Garnish: olives
  • Garnish: serrano peppers
  • *Roman mix: Blend 3 pounds heirloom tomatoes, 1 tablespoon capers, 2 red Fresno chiles, 1 shallot, 2 tablespoons chopped pickled peppers, 2 teaspoons fish sauce, 1 teaspoon cabernet vinegar, and 1 teaspoon ground Aleppo pepper. Season with kosher salt, black pepper, and parsley.

Instructions

  1. Place 2 olives in a pint glass.
  2. Pour 6 ounces of beer into the glass.
  3. Top with the Roman mix.
  4. Place 2 shucked oysters with their liquor in the glass.
  5. Garnish with chile threads, an additional olive, and a serrano pepper.
