Ingredients

  • 2/3 cup blanched almonds
  • 1.50 cups granulated sugar
  • 6 cups whole milk
  • 2 cinnamon sticks
  • 1 lemon rind
  • 1 tsp pure vanilla extract
  • 1/4 tsp baking soda
  • 8 large egg yolks
  • 1 cup white rum or aguardiente

Instructions

  1. In a food processor, pulse almonds with 2 tablespoons of sugar until ground to a fine paste.
  2. In a large saucepan, bring milk, cinnamon, lemon rind, vanilla, and baking soda to a boil, then simmer for 15 to 20 minutes. Set aside.
  3. In a large bowl, whisk egg yolks, the remaining 1 1/2 cups sugar, and ground almonds until thick and pale.
  4. Remove cinnamon and lemon rind from the milk mixture, and slowly add the milk to the yolk mixture while whisking constantly.
  5. Return the mixture to the pan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon, about 5 to 7 minutes.
  6. Set aside to cool completely, approximately 2 hours.
  7. Stir in rum or aguardiente and serve.
