Ingredients
- 1/4 cup sugar
- 1/4 cup water
- 1 rosemary sprig
- 1/2 cup frozen peach slices
- 1/4 cup crushed ice
- 1/4 cup Spumante (or Prosecco or any sparking white wine)
- 1/2 oz peach schnapps
- 1/4 oz rosemary simple syrup
- 1/2 teaspoon fresh squeezed lemon juice
- 1 thin slice of peach for garnish
Instructions
- Make the rosemary simple syrup by combining sugar and water in a saucepan over high heat until the sugar is dissolved.
- Add the rosemary sprig and simmer for one minute, then remove from heat and let it sit for 20 to 30 minutes, then strain into an airtight container and refrigerate.
- In a blender, combine the frozen peach slices, crushed ice, Spumante, peach schnapps, rosemary simple syrup, and fresh lemon juice, then blend until smooth.
