  • 5 large rosemary sprigs (about 5 inches)
  • 1/2 cup honey
  • 2 oz Lillet
  • 1/2 oz lemon juice
  • 1/2 oz Rosemary Honey
  • 1 dash orange bitters
  • 2 oz sparkling wine
  • Rosemary sprig for garnish


  1. To make the Rosemary Honey: Pour 4 oz boiling water over rosemary in a heatproof container. Cover and let steep for 20 minutes. Stir in honey until dissolved and let it cool completely for about an hour. Strain before using.
  2. In a cocktail shaker with ice, combine Lillet, lemon juice, Rosemary Honey, and orange bitters. Shake vigorously.
  3. Strain the mixture into a large wine glass over fresh ice.
  4. Top with sparkling wine and stir briefly.
  5. Garnish with a clapped rosemary sprig.
