Ingredients
- 5 large rosemary sprigs (about 5 inches)
- 1/2 cup honey
- 2 oz Lillet
- 1/2 oz lemon juice
- 1/2 oz Rosemary Honey
- 1 dash orange bitters
- 2 oz sparkling wine
- Rosemary sprig for garnish
Instructions
- To make the Rosemary Honey: Pour 4 oz boiling water over rosemary in a heatproof container. Cover and let steep for 20 minutes. Stir in honey until dissolved and let it cool completely for about an hour. Strain before using.
- In a cocktail shaker with ice, combine Lillet, lemon juice, Rosemary Honey, and orange bitters. Shake vigorously.
- Strain the mixture into a large wine glass over fresh ice.
- Top with sparkling wine and stir briefly.
- Garnish with a clapped rosemary sprig.
