Ingredients

  • 1 Black Tea Bag
  • 1 Green Cardamom Pod
  • 3 Thin slices Ginger
  • 1 Cinnamon Stick (4 inches long)
  • 1 Clove
  • 1/4 tsp Black Peppercorns
  • 1 Star Anise
  • 1/8 tsp Fennel Seeds
  • Pinch of Nutmeg (freshly grated)
  • 1/2 Vanilla Bean
  • 1/2 cup Water
  • 1-1.50 tbsp Light Brown Sugar
  • 1/2 cup Whole Milk
  • 2 tbsp Dark Rum

Instructions

  1. Measure out the spices and set aside.
  2. Gently bruise the ginger using a muddler and add it to a saucepan along with the split vanilla pod, whole spices, and tea bag.
  3. Pour in the water and cook over moderate heat for 10 minutes.
  4. Add the milk and 1-1.5 tbsp of sugar, then bring to a boil and simmer gently for 20 minutes.
  5. Stir and taste, adding more sugar if necessary.
  6. Strain the tea through a fine-meshed sieve or a nut bag.
  7. Serve as it is or with 2 tbsp rum. Garnish with cinnamon and/or star anise.
  8. Store any leftovers in a bottle in the fridge for up to 3 days.
